Ainsley’s Post Christmas Caribbean Fish Curry With Spinach
On New Year’s Eve Eve (Friday November 30th) Ainsley Posted A Light Refreshing Recipe To Enjoy After All The Christmas Richness. It’s Simple. It’s Healthy. It’s Tasty & Timely. And It’s Refreshing.
Serves 4. Enjoy With Cous Cous (Ainsley Has His Own Brand Available At Asda) or With Rice or Potatoes. Also Delicious On Its Own. Especially If You Want To Tone Down The Post Christmas Carbs or If You Choose Not To Mix Proteins & Starch.
Ainsley Recommends A Firm White Fish Such As Hake or Cod And Maybe Even Some Prawns Too. Ultimately Use Want You Wish. Being A Good Cook Involves An Element of Experiment. And Personal Satisfaction.
4 X 120g Large Skinless White Fish Fillets. Juice 1⁄2 Lime, 1 Tbsp Vegetable Oil, Sea Salt And Freshly Ground Black Pepper. 2 Tbsp Mild Caribbean Curry Powder, 3cm Pieces of Peeled & Finely Grated Fresh Root Ginger, 2 Minced Garlic Cloves. 1 Finely Chopped Scotch Bonnet Chilli, 1 Roughly Chopped Red Pepper, 5 Sliced Spring Onions.
Handful Chopped Coriander Leaves, 1 Tsp Chopped Thyme Leaves, 100g Spinach
1 X 400g Tin Coconut Milk
Rub The Lime Juice Over The Fish Fillets. Season Wth Salt & Pepper. Add 1 Tbsp The Curry Powder. Set Aside. Heat The Oil In A Deep Frying Pan Over A Medium Heat. Add The Ginger, Spring Onions, Garlic, Scotch Bonnet Chilli & Red Pepper And Cook For 5 Minutes. Stir In Remaining Curry Powder & Thyme And Cook For Another Minute.
Add The Coconut Milk And Simmer 8–10 Minutes Until Sauce Thickens. Then Add The Fish Simmer Gently For 8–10 Minutes Until The Fish Flakes Easily.
Place The Spinach & Half The Coriander Leaves Into The Pot Around The Fish Being Careful Not To Crush The Fillets. Gently Serve Up When The Leaves Are Steam.
Garnish With The Remaining Coridaner.
